It's been a busy couple of days! But, I had a long to-do list today and got most of it done. One of the things on my to-do list included making a dessert for tonight. It's a great little recipe that doesn't require too many ingredients and is super easy to put together. It's also a great cool treat for the summer. Here it is:
Lemonade Pie
- one graham cracker pie crust
-two 4 oz. packages of instant vanilla pudding
- one can of frozen lemonade, thawed (you will only use half - 6 oz.)
- one 8 oz container of cool whip - thawed
- 1 3/4 C. of milk
- Pour the milk and pudding mixes into a bowl and whisk until combined; Add 6 0z. of lemonade; Fold in 8 oz. of cool whip; Pour into pie crust and either refrigerate or freeze, whichever you prefer.
I love summertime dessert recipes that don't require you to turn on the oven!
Edit: We had the lemonade pie tonight...it was good. But, I might reduce the lemonade to maybe 4 oz. It was VERY lemony the way the original recipe is.
The other major project I had today involved my Cuttlebug. I am making wedding invitations for my friend that owns the pottery shop. And, since they are getting married in a country setting and the wedding is in the fall, she asked if we could incorporate a pumpkin on the invitation. I know, not a "traditional" invitation, but it's turning out so great. So, I am using the Pumpkin Spice 3 x 3 combo die for the Cuttlebug. I cut out 100 of those little pumpkins (yes, 100. not a typo!) I will post a picture as soon as I have them done. I'm also using some of the baker's twine I purchased over at The Twinery.
As the title says, the last thing I am blogging about today is the card. I have a friend who recently lost her dad. So, I had to get this in the mail to her today.
I ended up mailing it in a bubble mailer because of the pearl embellishment. I'm interested...how do you all mail your greetings with 3-d or hard embellishments?

As for mailing... I try to fit it into a regular envelope and then stick that into a bubble mailer. Recently, I've been making little coordinating boxes for the cards, especially if it's heavily embellished. HTH!
